Ricotta Fruit Dip
Lightly sweetened ricotta is the perfect compliment to fresh berries or an assorted fruit platter. This ricotta dip can also be the perfect filling for your breakfast crepes, stuffed french toast, or dolloped on a waffle in place of whipped cream.
16 oz (1 package) fresh nor ricotta
1/4 cup confectioners' sugar* 1tsp vanilla extract
1 tbsp freshly squeezed lemon or orange juice, optional
Using a blender, hand mixer, or food processor, combine all ingredients until smooth and creamy.
Serve with fresh berries or a fruit platter.
Garnish with a sprig of mint or citrus zest, if desired.
* Confectioners' sugar can b substituted with 2tbsp local honey or 2 tbsp sugar
* Sweetened ricotta mixture can be refrigerated covered up to 5 days.
