This parfait starts with our fresh nor ricotta, slightly sweetened, and is layered with berries for a refreshing, healthy treat.
16 oz nor ricotta
3 tbsp local honey (sugar can be substituted)
1tsp vanilla extract
1 tsp lemon zest
1-2tsp fresh mint or basil, minced
1 lb. strawberries, chopped
Combine ricotta, honey (or sugar), and lemon zest in a mixing bowl. Whisk with a hand mixer until well combined and the ricotta seems fluffy.
Toss strawberries with chopped mint or basil, and set aside.
To assemble the parfaits, spoon 1-2 tbsp of the sweetened ricotta mixture to the bottom of a tall glass. Top with a layer of strawberries, more ricotta, a layer of blueberries, then repeat layers until glass if full.
Garnish with a sprig of mint or basil, if desired.
* Sweetened ricotta mixture can be done ahead of time and covered in the refrigerator until ready to use.
* Assembled parfaits can be covered and refrigerated 4-5 hours in advance
