This fast and delicious summer dish comes together in minutes. Hellim, juicy tomatoes, and fresh herbs make a great appetizer, mezze or simple dinner. Enjoy!
8oz hellim, cut into 1/2 inch cubes
1 pint cherry tomatoes, halved
1 small seedless watermelon, cut into 1 inch cubes
1/2 red onion, sliced thinly
1 small handful fresh mint or basil (or both!) torn
1/4 cup olive oil
2 tbsp vinegar (balsamic, red wine, sherry, any will do!)
Salt and freshly ground black pepper, to taste
Gently mix hellim, watermelon, tomatoes, onion and herbs in a bowl.
Whisk together oil, vinegar, salt and pepper in a separate bowl.
Toss gently to combine.
Serve as is or over a bed of arugula or field greens.
